Chicken Schnitzel
Serves: 4
Prep time: 15 minutes
Cook time: 20 minutes
Ingredients:
2 cup Panko breadcrumbs
2 tbsp chopped parsley
1 tbsp chicken salt
1 cup plain flour
1 egg
½ cup milk
4 pieces chicken schnitzel (un-crumbed) ** see note
Vegetable oil for cooking - around 1 cup
You will also need:
Large Frying pan
2 mixing bowls
2 plates
Paper towel
Method:
There are 3 steps to cooking and crumbing the chicken, get your bench set up first to make the whole process easier.
Tip: Arrange the plates close together on your bench to save on clean up!
Prep: In a shallow plate, evenly spread the flour. In a mixing bowl, whisk together egg and milk until smooth. In a separate mixing bowl, combine Nutri V Mixed Vegetable Powder, breadcrumbs, parsley, and chicken salt.
Dunk: Individually coat chicken pieces in flour mix, then transfer into egg mix until completely submerged, then transfer into breadcrumb mixture, ensuring it is well coated. Set each piece aside on a dry plate and repeat with remaining chicken.
Cook: Heat oil in a frying pan on a medium-high heat. You can check to see if the oil is hot enough by sprinkling some breadcrumbs over oil. If they sizzle it is ready to go, gently add the chicken to the oil and fry for 2-3 minutes. Gently turn for a further 2 minutes until chicken is a lovely golden brown. Remove chicken from pan and place on a plate with paper towel to remove excess oil. Season with a little salt while still warm. Repeat with remaining chicken until all chicken is cooked.
This recipe will also work well in the oven or air fryer at 180 degrees for 12-15 minutes.

Notes:
** If you are unable to find un-crumbed chicken schnitzel, it is easy enough to make.
Use 1 large chicken breast and cut in half lengthwise. Then repeat this again with each half until you have 4 pieces of chicken. You can also use a butcher’s mallet to flatten the chicken out, but it is not necessary.
