NEW! One Pot Chicken Meatballs with Lemon Orzo

Serves: 4 people

Prep time: 20 minutes

Cooking time: 30 minutes


Ingredients:

Meatballs:

  • 500g of chicken mince

  • ½ cup dry breadcrumbs

  • ½ cup Parmesan cheese

  • ¼ cup milk

  • 1 egg

  • ¼ cup fresh parsley (finely chopped) optional

  • 2 tbsp Mixed Veg powder (14g)

  • 1 tsp Italian seasoning

  • 1 tsp salt

  • 1 tsp minced garlic

  • ½ tsp onion powder

  • ¼ tsp black pepper

  • 3 tbs olive oil

Lemon Orzo:

  • 2 cloves garlic (finely minced)

  • 2½ cups chicken stock

  • 1½ cups dry orzo pasta

  • ⅔ cup cream

  • ¼ cup shredded Parmesan cheese

  • ½ tsp salt

  • ¼ tsp black pepper

  • Zest of one lemon

Method

  1. Mix all meatball ingredients together in a bowl. Roll into tablespoon-sized balls.

  2. Add olive oil in a non-stick frying pan. Cook meatballs until brown and cooked through. Depending on the size of the pan, this may take 2 batches. Once all meatballs are cooked remove and set aside.

  3. Heat the remainder of the olive oil in the pan and add garlic. Once the garlic is cooked, add chicken stock, orzo, cream, shredded parmesan, salt and pepper. Bring up to simmer then reduce heat and let sit for a few minutes

  4. Place meatballs back on top and cover for 8-10 mins or until orzo is soft.

  5. Finish and serve with a big squeeze of lemon juice, zest of a lemon and top with shredded parmesan. Option to add more parsley on top also.
