Burrito Bowl

Beef Burrito Bowl with rice and salad

Serves: 4-6 people

Prep time: 15 minutes 

Cook time: 10 minutes  


Ingredients:

  • 14g Nutri V Broccoli or Mixed Veg powder (or 7g of each!)

  • 1 medium onion, diced (approx 180g)

  • 2 tbsp olive oil

  • 1 tsp cumin

  • 1 tsp smoked paprika

  • 1 tsp oregano

  • 1 tsp garlic salt

  • ½ tsp chilli flakes (optional)

  • 500g lean beef mince

  • 140g tin tomato paste

  • 100ml water

  • 200g crushed tomato

  • 25g butter (optional)

  • Salt & pepper for seasoning

You will also need:

  • Medium frying pan

  • 2 Small mixing bowls 

Method:

  1. Combine cumin, smoked paprika, oregano, garlic salt & chilli flakes in a bowl.

  2. Heat a large frying pan on a medium-high heat, add oil then onion and sauté for 2 minutes until onion is light golden brown. 

  3. Add spice mix to the onion and cook for 2 minutes.

  4. Add beef mince and cook for around 5 minutes until the mince is well broken down and lightly browned.

  5. While the mince is cooking, combine Nutri V powder, water, tomato paste and crushed tomatoes in a bowl. Stir to a paste. Transfer to frying pan and cook for a further 5 minutes. 

  6. If using butter, add to the pan, allow to melt and combine. 

  7. Taste for seasoning and add additional salt and pepper if you wish.

Chef's suggestion:

Serve the beef mix in a bowl with any or all of the following vegetables;

Shredded cabbage, carrot, black beans, avocado, corn, sour cream, diced tomato, red pepper, jalapenos & a wedge of lemon. Can also be enjoyed in a wrap or taco!
