Cauli-Nana Bread
Serves: 8-10 servings
Prep time: 20 minutes
Cook time: 40 minutes
Ingredients:
100mL vegetable oil
100g butter, cut into 1cm cubes
150g brown sugar
1 tbsp honey
4 medium bananas, well ripened and cut into finger thick slices
1 tsp vanilla extract
¼ tsp ground cinnamon
180mL water
4 large free range eggs
380g self raising flour
½ tsp baking powder
1 pinch of salt flakes
You will also need:
23cm x 12cm non-stick tin baking tray
Canola baking spray
Method:
Preheat oven to 180 Deg Celsius, medium fan.
In a medium saucepan on a low heat, add vegetable oil, butter, 100 grams of brown sugar, 3 bananas, honey, vanilla extract, cinnamon and water. Mash with a whisk until smooth.
Slowly add the eggs, combine, and then remove from heat. Allow to cool for 5 minutes.
While the mixture is cooling, in a large bowl, sift together Nutri V cauliflower powder, flour, and baking powder. Slowly pour in the banana mix from the pot and fold gently to combine.
Transfer the mix to a well sprayed baking dish.
Place the remaining banana and remaining 50 grams of brown sugar in a small mixing bowl. Toss the banana through the sugar until well coated and then gently place banana pieces on the top of the banana bread batter before baking. The banana will caramelise into a yummy topping.
Bake the banana bread for 40 minutes on the bottom shelf of the oven. Test the bread with a skewer. Skewer should come out clean from the bread, if there is still batter on the skewer, cook for a further 5 minutes or until the skewer comes out clean.
Remove from the baking tray after 10 minutes and allow the bread to cool on a cooling rack. Sprinkle a pinch of salt flakes before serving.
