NEW! Chocolate Ganache Cake
Serves: 8-10 people

Ingredients:
For the chocolate & pumpkin cake
180g self-raising flour
60g cocoa powder
2 tsp baking powder
190g caster sugar
Pinch sea salt flake
2 eggs
1 tbsp vanilla extract
1 cup milk
1 cup vegetable oil
1 cup warm water
For the ganache
7g Nutri v pumpkin powder
220g dark cooking chocolate
40g canola oil
220g thickened cream
You will also need:
2 x medium sized bowls
Whisk
Spatula
22cm cake tin, lined with baking paper and lightly sprayed with canola oil
Small saucepan
Flat ended wooden spoon for the ganache
Method:
Pre heat oven to 180 degrees, fan medium.
In a medium sized bowl, sift the following ingredients together, Nutri V pumpkin powder, self-raising flour, cocoa, baking powder, caster sugar, flake salt and mix till well blended. Make a well shape in the centre of the mix.
In a separate bowl, combine 2 eggs, 1 teaspoon vanilla essence, 1 cup of milk, 1 cup vegetable oil and 1 cup warm water. Whisk until the egg yolks are combined and the mixture is all one colour.
Slowly pour the wet ingredients into the dry bowl and gently combine to form a batter, then transfer the batter to the lined cake tin.
Cook the cake in the pre heated oven for 30-35 minutes. The cake is cooked when the sides of the cake pull away from the edge of the cake tin.
Remove from oven and cool for 10 minutes before transferring to a cooling rack.
To make the ganache
Place the saucepan on a low heat. Transfer the chocolate to the pan and allow to melt slowly. In a very small bowl place the Nutri V pumpkin powder and vegetable oil and combine to a paste. Set aside.
Once the chocolate is melted, remove saucepan from the heat and add the thickened cream. Gently stir to combine to one consistency and colour. Add the pumpkin paste, stir and combine.
Once cake is completely cooled, pour the ganache over to serve.
