Mac & Cheese
Serves: 4 people

Ingredients:
500g elbow/macaroni shape pasta
Olive oil, for cauliflower cheese sauce
18g Nutri V powder - Broccoli, Mixed Veg or Pumpkin
140g cubed butter
40g corn flour
700g milk (any type will work)
140g grated tasty cheese
70g parmesan cheese
Salt & pepper to season
Cauliflower cheese crumb:
50g panko breadcrumb
40g parmesan cheese
Flake salt
You will also need:
Large pot for cooking pasta
Medium saucepan for cauliflower cheese sauce
Whisk
Flat ended wooden spoon/spatula
Small bowl 25x25cm
Oven proof baking dish
Method:
Pre heat the oven to 160 degrees.
Bring a large pot of salted water to boil and cook the macaroni pasta, stirring occasionally until al dente. Strain and transfer back to rest in the large pot. Season with salt and stir in a splash of olive oil to loosen.
In a medium sized saucepan, prepare to make the cauliflower cheese sauce. Place the saucepan on low heat. Add the cubed butter and allow it to melt. Once butter is completely melted, add corn flour and stir on a low heat using the flat ended wooden spoon/spatula. Once the mixture has slightly thickened add the milk, Nutri V cauliflower powder and gently whisk to combine. Once smooth, add both the cheeses and gently cook for a further 5 minutes, whisking to ensure no lumps form.
Once the sauce is finished, transfer the sauce over the macaroni pasta and mix well through the pasta.
Transfer the mixture to the baking dish and prepare to make the Cauliflower cheese crumb.
In a small bowl, combine Nutri V cauliflower powder, panko breadcrumbs, parmesan cheese and salt. Once combined, use a spoon to gently spread crumb over the macaroni cheese, covering well.
Cook the macaroni bake in the pre heated oven for 10-12 minutes or until golden brown and enjoy!
